Vinnova tanks are designed to be used in a similar way to a traditional barrel. The special lid, made of certified materials, includes an air siphon system that allows the wine to be displaced in the event of pressure increases due to temperature. All the usual operations, such as filling, racking and sampling, are carried out in the same way as in any other tank available on the market.
Vinnova containers can be cleaned manually through their 300mm inlet. They can also be washed mechanically with a high-pressure lance. Thanks to the properties of the glass used, this process is easy to carry out. For drying, they are manually tilted onto their support to drain them and allow them to dry.
Vinnova's R&D department has designed special supports made of stainless steel or long-lasting technical plastics, allowing them to be handled with a forklift or pallet truck.
Racking can be done in several ways.
The large opening of the 220-litre tank, with a 300mm mouth, allows for racking in the same way as with conventional barrels using a pumping rod. This means that no extraordinary investment in machinery is necessary to start vinification with Vinnova tanks.
SO2 management in Vinnova glass tanks offers a significant advantage compared to barrel aging, with a reduction in total SO2 from 25% to 50% on average. Furthermore, thanks to their spherical shape and the convection theory, the lees do not go back into suspension. If you wish to reactivate the lees, Vinnova offers special equipment designed for this process, minimizing risks with the use of a PTFE paddle. Also, the clarification process by sedimentation is easy to carry out in these vessels.
Vinnova's special design makes it completely airtight, eliminating the need for additional oxygen. This prevents the wine from reducing, keeping it alive and allowing a slow evolution that enhances its taste and aromatic values. In addition, you can experiment with techniques such as batonnage, racking and micro-oxidation. The properties of glass allow for good thermal insulation. We can constantly monitor the temperature using a thermometer on the top lid.
One of the outstanding properties of glass is its transparency, which allows for a harmonious development of the wine and the possibility of observing the winemaking process in real time. However, to protect the wine from exposure to light, Vinnova offers protective covers and opaque tanks as an option. In addition, unlike traditional containers such as wooden barrels, concrete eggs or stainless steel containers, Vinnova tanks do not release unwanted particles, guaranteeing a wine free of impurities.
